In my post about Taco Salad, I mentioned that I always keep taco meat prepped and portioned in my freezer.
Well, that's not the only thing I always have on hand.
I always have a few cans of tuna on hand as well, because it's a great source of protein and so easy to whip together in a salad.
In today's recipe, I will share with you my tuna salad recipe.
It is super easy to make, it's great to take with you - if you need a meal to carry along.

Salad:
Lettuce
1 Tomato
1 Avocado
Handful of green olives
Feta cheese
1 TB olive oil
2-3 squirts of lime juice
Tuna Salad:
1 can of tuna drained
1 pickle diced
1 TB Mayonnaise (replace with 1 extra TB of sour cream or Greek yogurt if traveling)
1 TB Sour Cream or Greek yogurt
Make the salad. You can add peppers or any other low-carb veg you enjoy to the salad.
Mix the ingredients for the tuna salad and spread over the top of the green salad.
Drizzle with the olive oil and lime juice.
Salt and pepper to taste.
It is that simple!
