Keto Maple Breakfast Sausage

To this day, if someone asks me what my favorite breakfast is, I don't have to think...not even for a second. 

The words are coming out of my mouth before the person gets to their question mark.

Biscuits and gravy. 

Nothing spells a lazy Saturday morning comfort breakfast like biscuits and gravy!

Two problems though...no, three. 

Problem number one: I live in Croatia, where breakfast sausage isn't sold. Yeah, you can make it with bacon, but it's not as good as sausage gravy.

Problem number two: My family isn't a fan. *sob*

Problem number three: I'm keto.

Thanks to beautiful keto people who make up delicious recipes, there is a solution for problems 1 & 3, and problem 2 can be worked around by just giving my very weird family something else to eat!

For the longest time, after moving to Croatia, I craved maple-flavored breakfast sausage.

I've tried many different kinds. Some were okay, others were just not the same at all. And then I stumbled on "the one".

Problem is, it was definitely not keto-friendly.



But, an adjustment here, a change there....and what do you know? I now have perfected the recipe and I always have breakfast sausage patties on hand.

Keto Maple Breakfast Sausage


Ingredients

1 lb ground pork
1 tsp sage
1 tsp salt
1/2 tsp pepper
1/4 tsp marjoram
3-4 drops of stevia
a few drops of maple extract


Instructions

Dump the ground pork into a large bowl and one by one, add the remaining ingredients.

Mix well with your hands. Don't be afraid, my friends. Just get your hands in there and kneed that bad boy.

Afterward, form balls and flatten with the palm of your hand between two sheets of waxed paper.




Stack the patties between squares of wax paper and freeze.

If you use wax paper, it's easy to break off one patty, defrost, and fry up to serve with eggs made your favorite way!
