I eat a lot of salads.
By "a lot", I mean that I eat giant salads nearly every single day.
In fact, I've found it is the easiest and most delicious meal modification I've found. Nearly every meat dish I make for my kids gets turned into a salad.
Just take the meat, chop it up, and throw it on a bed of lettuce.
Add some chopped vegetables, don't forget the avocado, make a dressing.....and bam!
You have a delicious meal.
One of my favorite meals is this Tuna Salad.
Keto Tuna Salad
There are several variations I've added below that you can make to keep it fun and delicious, too. This is one of the easiest meals I make.
I always make sure to have a lot of extra tuna on hand for when I need a quick meal.
I also find that if I need to take a meal with me, I can always prep this salad and take it with me. If you customize it, you don't even need refrigeration.
So, without further ado - Keto Tuna Salad!Ingredients
1 1/2 Cup Romaine Lettuce
1/2 medium tomato
1/2 Avocado
3-4 large green olives sliced
Toss with olive oil
Tuna salad:
Can of tuna in brine drained
1 TB Mayonnaise (Use this avocado-oil based one)
1 TB sour cream
1 pickle diced
1/4 onion diced (optional)
Notes:
Tear your salad leaves in a bowl. Chop the tomato, green olives, and avocado and mix with the salad leaves.In a separate bowl, spoon in the tuna. Finely dice the pickles and add to the tuna. Add the mayonnaise and sour cream. Mix well.
Spoon over the green salad.
Drizzle with olive oil.
I usually use an ice cream scoop to portions of the tuna onto the green salad.
Variations of Keto Tuna Salad
There are dozens of ways to switch up Keto Tuna Salad that make it delicious and fun. It makes a great summer dish, or - if you're like me - you'll eat it all year long!
Add steamed vegetables in place of pasta:
I use steamed radishes and cauliflower to give some texture to the salad, in place of using pasta. When doing this, I will usually use less lettuce to make it more of a pasta-less salad than a green salad.
Add a dressing:
Blue Cheese Dressing
1 TB Mayonnaise
1 TB sour cream
1/2 TB olive oil
15 grams blue cheese crumbled
squirt of lemon juice
basil
salt
Ranch Dressing:
1 TB Mayonnaise
1 TB sour cream
1/2 TB olive oil
(spices to taste)
basil
oregano
dill
salt
