I have mentioned many times on my keto journey how hard it is that I am the only keto person in my family.
While technically, that is still the case, I am moving my youngest toward a keto lifestyle.
He struggles with a lot of things that I believe to be a gluten sensitivity:
Extreme dandruff (yuuuuuuuuuge flakes)
Constipation
A range of allergies
A range of allergies
But also, he is extremely carb-seeking.
This kid can go through buckets of ketchup, loads of candy, and he rarely says, "I'm full. I'm not going to eat any longer."
No - he can eat all of us under the table.
But he's also not terribly active.
He's not the sporty type.
It's mainly his allergies, dandruff, and other symptoms that have led me to move him more toward a keto lifestyle.
To be certain, I have tried this before.
A few times.
I would get the sudden urge to kick all carbs and unhealthy foods to the curb and take my whole family low-carb -- but that lasted a few days before it became so complicated that I gave up.
I know that he may never be fully keto all of the time.
He attends Youth Group where they offer snacks (usually chips, cookies, and soda).
And he will want foods that my husband and older son eat at times....
But, I have found that making small changes make them more lasting.
I began with Ketchup - it was the easiest thing to swap out for a keto option that I knew I could do consistently.
Now I just make him pizza sauce. He prefers it over ketchup now!
I take tomato sauce and tomato paste, mix in Italian seasonings, and add in a few drops of stevia.
It's super easy and simple to make, and I always keep those ingredients on hand - so we never run out.
Today I made him this protein bread.
It calls for eggs, cottage cheese, oatmeal, and sunflower seeds. 1 slice is only 11 carbs, and it's very heavy and filling.
While oats are not technically keto, this bread is significantly lower in carbs that actual bread and far tastier than the protein bread in the store.
It's super easy to make, and I slice it up and freeze it in portions to make it last longer.
Guiding my son toward a low-carb/keto lifestyle seems far more do-able this way -- small changes that are long-lasting and doable.
Next I need to find a cereal recipe that he'll enjoy -- because cereal is one of his favorite foods and he hates granola! 😕
