I always have portioned taco meat in my freezer, ready to go for those times when I need a quick meal. I can take a baggie of taco meat, microwave it, and put together a quick salad.
By the way, I season my own taco meat to keep it keto.

Here is my favorite go-to keto meal.
I start with a bed of lettuce. My favorite it crystal lettuce - but use whatever kind you like best.
1/2 tomato diced - go easy on the tomato, it does have carbs. BTW, half of this is for my son's tacos.
Shredded cheese.
A few sliced olives.
I would add avocado - I didn't for my meal today because I had already had an earlier meal that had a bit more carbs, so I was going easier on carbs for this meal.
Taco meat (roughly 150 grams)
Topped with Greek yogurt.
That's it.
And this is what I usually do for Taco Tuesday (this week it's Thursday, but whatever). Part of the fam likes tacos, part burritos, and I have a salad.
It's a bit more work, but everyone's happy - so it's worth it!
