Keto Zuppa Toscana

I make Copycat Zuppa Toscana a few times a month. My family loves Italian food, and this is one of my husband's most favorite recipes.

But one of the things I don't always love about being on Keto is eating a meal that is totally different from the rest of the family.

Sometimes I can't get around it.

Sometimes there are no variations that can be made so I can eat something that is simply modified.

But....

This is a recipe that is very easily modified, so I will share it with you today.


Keto Zuppa Toscana:

1 TB lard
1/2 lb chopped kale
1 md. onion
2 cups of chopped cauliflower
1/2 cup of chopped broccoli
2 cups of bone broth
1 cube beef bouillon
1/2 cup of freshly grated Parmesan
1 cup of heavy whipping cream

Instructions:

Brown the sausage in a larger stock pot in smaller chunks, remove, and set aside.

Melt the lard in the same pot and add the vegetables. Lightly sauté. They should still be crunchy. Add broth and bouillon and bring to a boil. Let boil until vegetables are slightly softened (enough to eat). Add Parmesan and heavy whipping cream. Heat until almost ready to boil (DO NOT BOIL, or the cream will curdle).

Stir in the sausage.

Serve hot.
