Chicken with Roasted Vegetables

 


This was a fairly good day. 

The kids did get their Friday treat out of the prize box. That is something we'll have to slowly adjust with time, but for now we're picking our battles.

Also, earlier in the week, tata picked up a whole package of carbonated sodas. They do have less sugar, but sugar nonetheless.

This will be a constant battle until they're gone.

For now, we're adjusting to healthy meals.

Today I sauteed chicken pieces (leg, thigh, wing) and made a thin gravy (no flour), and roasted a vegetable medley of cauliflower, broccoli, and carrots. 

This was a very delicious and filling meal.

I made sure to grease the pan to roast the veggies in with lard and then topped the veggies with coconut oil. When the oil and lard melted, I took them out of the over and tossed them so they were well coated.

I sprinkled them with vegeta, salt, pepper, onion powder, and garlic powder. They had amazing flavor!
